An Introduction to Developing Food Safety Programs
Do your KEY STAFF have appropriate skills and knowledge in food safety and food hygiene?

Customers expect the highest standards in food handling and expect food handlers to be  well trained.

Ensure that the food safety supervisor and other ‘key’ staff undertake nationally 
recognised training.


Accredited Course in Basic Food Hygiene

Who should attend ? 
Anyone who is handling, preparing or serving food to the public should attend this course.  This includes staff who work in:
  • food businesses, food industry
  • nursing homes, hostels
  • hospitals, restaurants, café etc
  • child care centres, canteens 
Participants must be able to communicate 
and understand English. 
Duration 
One Day. Morning tea, lunch and afternoon tea will be provided. Please notify Lyn if there are any special needs. 
Course Content
MORNING
  • Food Safety Legislation
  • Food Contamination & Food Poisoning
  • Food Receipt, Food Storage;
  • Food Preparation, Thawing, Cross-contamination, Cooking, Cooling
  • Hot Holding, Serving & Plating
  • Health and Hygiene Requirements for Food Handlers.
    AFTERNOON

  • Food Display, Food Packaging, Food Transportation, Single Use Items
  • Food Disposal & Food Recall
  • Cleaning & Sanitising, Pest Control, Maintenance
  • Temperature Monitoring & Calibration
  • Costs and Consequences of Food Contamination
  • Training
Assessment
The assessment will be completed partly throughout the day and at the end of the course.
Learning Outcomes
On completion of this unit of competency the student will be able to:
  • Identify and understand how to minimise and prevent food safety hazards in the business.
  • Have knowledge of basic food safety practices required in a food business in line with legal requirements.
  • Identify & comply with personal hygiene standards.
  • Understand food legislation and the responsibilities of food handlers.
Certificate and Competencies
Participants will receive a Statement of Attainment for when they successfully complete the ‘Course in Basic Food Hygiene’.

The Course in Basic Food Hygiene meets the following units of competency:

   THHGHS01B Follow workplace hygiene procedures

From the Health Training Package:
   HLTF207B Follow basic food safety practices
